LEMON CURD THUMBPRINT COOKIES

INGREDIENTS

For the cookie dough:
1 cup unsalted butter, room temperature
⅔ cup granulated sugar
½ teaspoon vanilla bean paste, or pure vanilla extract
Juice of ½ fresh lime
Zest of 1 small lime
Dash of salt
2 cups plus 2 tablespoons unbleached all-purpose flour
½ – ⅔ cup lemon curd

For the glaze:
1 cup powdered sugar
Juice of ½ fresh lime

INSTRUCTIONS

Prepare the Dough: Beat butter, sugar, vanilla, salt, lime zest, and lime juice until creamy. Gradually add flour, mixing until just combined. Chill the dough for 1 hour.
Shape and Bake: Preheat oven to 350°F. Form dough into 1-inch balls and place on a lined baking sheet. Make an indentation in each cookie with your finger, and fill with lemon curd. Bake for 15 minutes or until lightly browned.
Glaze: Mix powdered sugar and lime juice to create the glaze. Drizzle over cooled cookies.
Tips:

For a deeper lemon flavor, add extra zest to the dough or a drop of lemon extract.
Ensure the cookies are completely cooled before adding the glaze to prevent it from melting.
Homemade lemon curd can elevate the flavor, but store-bought works well for convenience.
