Vanilla Extract: While technically 1 tablespoon of water can be substituted for vanilla extract, I do not recommend this substitution. For the best flavor, use pure vanilla extract.

Granulated Sugar: I have successfully used regular granulated sugar and organic cane sugar for these cinnamon sugar almonds.

Fine Sea Salt: If you only have iodized table salt, halve the amount specified for fine sea salt.

Afterward, add the almonds to the wet mixture and stir until they are evenly coated.

Once the almonds are coated, sprinkle the dry ingredients over them and stir until evenly distributed. Be sure to scrape any excess cinnamon-sugar mixture from the sides and bottom of the bowl, incorporating it into the almonds.

Spread the almonds evenly in a single layer on the prepared baking sheet. Bake at 250 degrees F for 1 hour, stirring every 15 minutes. Even if they seem done after 45 minutes, trust me and bake for the full hour. The key to the best candied almonds, with retained crispiness and a light texture, is baking them low and slow (no soggy almonds here).

After one hour, remove the almonds from the oven, give them a final stir, and let them cool on the baking sheet or enjoy them warm!
