NO BAKE CLASSIC WOOLWORTH CHEESECAKE

This Woolworth Cheesecake boasts a delicate, silky, and airy texture, with a rich and creamy flavor complemented by a hint of lemon aroma. It’s the perfect and simple no-bake dessert.

WHAT INGREDIENTS YOU’LL NEED

For the graham cracker crust:

  • 2 cups graham cracker crumbs;
  • 1 stick (½ cup) unsalted butter, melted.

For the Woolworth Cheesecake:

  • 1 package (3 oz) lemon Jell-O;
  • 1 cup boiling water;
  • 8 oz cream cheese, at room temperature;
  • 1 cup granulated sugar;
  • 5 tbsp freshly squeezed lemon juice;
  • 1 ½ cups heavy whipping cream, cold;
  • graham cracker crumbs, for topping.

HOW TO MAKE WOOLWORTH CHEESECAKE

  1. In a small bowl, dissolve 1 package (3 oz) of lemon Jell-O in 1 cup of boiling water. Set aside.
  2. Prepare the crust by combining 2 cups of graham cracker crumbs with 1 stick of melted butter. Press this mixture firmly into the bottom of a 9×13 inch baking pan to form the crust.
  3. In a mixing bowl, beat 1 ½ cups of heavy whipping cream until fluffy, then set aside. In another bowl, use an electric mixer to blend 8 oz of softened cream cheese, 1 cup of granulated sugar, and 5 tbsp of freshly squeezed lemon juice until smooth.
  4. Pour the chilled lemon Jell-O mixture into the cream cheese mixture and beat until well combined. Fold in the whipped cream and mix until fully incorporated.
  5. Spread the cream cheese mixture evenly over the prepared graham cracker crust in the baking pan. Sprinkle additional graham cracker crumbs on top.
  6. Chill the Woolworth Cheesecake in the refrigerator for at least 2 hours, or overnight for better setting. Slice and serve.

RECIPE TIPS;

  1. You can substitute 1 can of evaporated milk for 1 ½ cups of heavy whipping cream.
  2. For extra flavor, add vanilla extract to the cream cheese.
  3. The Woolworth Cheesecake will set more firmly if you refrigerate it overnight.
  4. For a thicker crust, use additional graham cracker crumbs.
